Recipe – Chia Pudding

Chia puddings are a fabulous breakfast because all the work (and there’s not much of it) is done the night before! Chia seeds are low in glycaemic index and are high in fibre, protein and omega-3 fats. Once made, the mixture will keep in the fridge for up to 4 days.

Ingredients

(Serves 4)

½ cup chia seeds

2 cups milk of choice

½ teaspoon vanilla extract

¼ cup maple syrup, or other sweetener of choice

¼ teaspoon cinnamon

¼ cup cocoa or cacao powder (optional)

1 pinch sea salt

Method:

  1. Sift cacao powder (if using) into a small mixing bowl. Add maple syrup, cinnamon, salt and vanilla and whisk to combine.
  2. Add chia seeds and whisk again to combine. Cover and refrigerate for 3-5 hours, or overnight.
  3. Serve with topping such as Greek yogurt and mixed berries.
