Serves 4

Ingredients:

14 fresh cherries

110g of fresh, pitted and finely chopped cherries

1 tablespoon of caster sugar

½ teaspoon of ground cinnamon

400mL of lemon juice

1 cup of additional caster sugar -extra

900mL of chilled, sparkling water

2 teaspoons of rosewater essence

Handful of mint sprigs, to serve

1 Lemon, cut into wedges, to serve

 

Method:

  1. Place whole cherries in an ice cube tray and cover with water. Place in freezer until completely frozen
  2. Place finely chopped cherries, cinnamon and ¼ cup of water in a saucepan, over medium heat. Stir occasionally, and cook until cherries have softened. Set mixture aside to cool. Once cooled, place in a blender and blend until smooth
  3. In a separate saucepan, combine lemon juice and extra sugar, over low heat. Cook, stirring until sugar completely dissolves. Remove from heat. Set aside and allow to completely cool
  4. Combine cherry mixture, lemon mixture, sparkling water, and rosewater in a serving jug. Stir so all ingredients are mixed well. Add lemon slices, mint, and cherry ice cubes. Serve straight away.
