There is so much that you can do with cauliflower – cauliflower rice, cauliflower mash, cauliflower flat bread, and now cauliflower pizza base. I have to be honest… this pizza took me by surprise. I really wasn’t expecting much more than a glop of mess, but it was so delicious I think I have a few people in my family converted! What I was most impressed about was that I could pick it up and eat it in my hands, just like normal pizza! I usually divide this into 4 individual sized pizza bases, but you could make them larger if you like. Here’s the recipe…
Ingredients:
600g cauliflower, chopped into florets
110g almond meal
2 eggs, lightly beaten
Preferred pizza toppings (I used tomato passata, capsicum, fetta, zucchini, mushrooms and grated cheese)
